Mexican Lasagna Recipe

Nothing like a good lasagna recipe a little different than traditional lasagna! My Mexican casserole is such a perfect weeknight dinner! Easy dinner ideas are my favorite kind of recipes, this one is the perfect quick fix meal for the whole family! It’s packed with Mexican seasoned beef, beans, rice and cheeses!

Ingredients Needed For Easy Mexican Dinner Recipe

  • ground beef- Use a lean ground beef for less fat to drain. 80% lean or higher.
  • taco seasoning– You can pick up any taco seasoning packet for the recipe. I’ve also just used my own ground cumin, paprika salt, pepper and garlic salt instead of the store packet.
  • refried beans– Use your favorite brand of refried beans for the recipe.
  • canned chopped green chilies– Find the diced/chopped green chilies in the Mexican Foods isle.
  • prepared salsa– Your favorite prepared salsa works just fine here. I use mild or medium.
  • white rice– Any cooked white rice works great. I usually keep frozen bags in my freezer for easy access. Trader Joe’s has a box in their freezer section I always keep on hand. Steam your own if you’d like as well.
  • soft taco size flour tortillas- Use flour tortillas for the recipe.
  • shredded cheddar cheese– Medium cheddar or a Mexican blend of cheeses is great.
  • fresh cilantro– Optional, but the cilantro adds a nice freshness and color to the top of the dish.

How To Make Mexican Lasagna

  1. Preheat oven to 350 degrees F. and lightly spray a 9 x 13 inch baking dish with cooking spray
  2. Heat a large skillet over medium heat. Add ground beef to skillet, cooking until browned. Stir in taco seasoning until well combined. Transfer to a large bowl.
  3. Place beans, green chilies and 3/4 cup salsa into a large bowl, stirring until well combined.
  4. Place rice and 3/4 cup salsa into large bowl, stirring to combine. Add beef and stir.
  5. Layer 1/2 cup beans onto bottom of baking dish then top with a layer of halved tortillas. Top with a light layer of beans then top with a layer of rice mixture. Layer with cheese and start layering again until you reach the top of the baking dish. The last layer should be cheese.
  6. Bake for 30 minutes, until hot and melted. Garnish with chopped fresh cilantro.

Top with taco meat, salsa recipe and repeat all layers again.

When layers are complete, top with cheese and bake at 350 degrees F. for 25-30 minutes.

How To Serve

Serve lasagna with a side of chips and salsa and a chopped salad if desired. You can also double the recipe and freeze the second 9 x 13 inch dish for a later dinner.

Leftovers

Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat as needed.

  • 1 pound lean ground beef
  • 1 packet Old El Paso Original Taco Seasoning
  • Two 15 ounce cans Old El Paso Refried Beans
  • 4 ounce can Old El Paso chopped green chilies
  • 1 1/2 cups mild prepared salsa divided
  • 2 cups cooked rice
  • 8 Old El Paso taco size flour tortillas cut in half (you'll use 15 halves)
  • 2 cups shredded cheddar cheese
  • 1 cup chopped fresh cilantro

  • Place rice and 3/4 cup salsa into large bowl, stirring until well combined. Add browned cooked beef and stir.

  • Layer 1/2 cup beans onto bottom of baking dish then top with a layer of halved tortillas. Top with another light layer of beans then top with a layer of rice mixture. Layer with cheese and start layering again until you reach the top of the baking dish. The last layer should be cheese. Bake for 30 minutes, until hot and melted. Garnish with chopped fresh cilantro.
