I think I have mentioned before just how surprised I am how easy it is to adapt clean eating to all your favourite foods.

I hate that cliché of “it’s not a diet, it’s a lifestyle change”! But I have to admit it to be true in this case.

Lets face it, a life without treats would be pretty dull and miserable. So I’m always especially happy when I find or create clean eating dessert recipes.

Before we go any further I have to confess that this recipe came about by accident.

I’ve been experimenting with grain free cookie recipes but getting incredibly frustrated that the cookie mixture is just too crumbly to maintain its shape when cooked.

I had one of those lightbulb moments when I realised that the mixture would make the perfect topping to a lovely fruit crumble!

The Crumble Filling

For the fruit filling I used apple and mixed berries (strawberries, raspberries, blackberries, blackcurrants and redcurrants).

Berries are not in season in the UK at the moment so I prefer to use frozen berries. Plus it’s a lot cheaper to buy bags of pre-mixed frozen berries than individual packets of fresh ones.

But feel free to change up the fruit if you would prefer something else. I think pears and plums also make a delicious winter crumble filling.

The chopped nuts in the crumble mixture are not essential but they do add a lovely crunch to the topping.

The crumble is best eaten hot, straight from the oven. So if you have guests round for Sunday lunch, then you may not want to tear yourself away to make it.

Prep Ahead

Although thisdessert really is not very labour intensive to make I do have some tips to make the process even easier!

You can cut up the apples earlier in the day, put them in a sealable container and fill it with cold water. This will stop the apples from oxidizing and turning brown.

The crumble mixture can also be prepared in advance, even days in advance, and stored in the freezer. I store mine in one of those closable sandwich bags, making sure to push all the air out before sealing it.

On the day, simply take the crumble mixture out of the freezer and allow it to defrost before putting it on top of the fruit. This also means that you can whip up individual crumbles in ramekins as a mid-week treat with very little hassle.

Description

A delicious gluten free, grain free, dairy free and refined sugar free Apple and Berry Crumble, perfect for these cold winter days

Ingredients

  • For the fruit mixture:
  • 4 small apples, chopped into small pieces
  • 200g frozen mixed berries
  • juice of 2 clementines
  • ½ tbsp vanilla extract
  • 25g sugar
  • For the crumble topping:
  • 25g coconut oil
  • 25g coconut sugar
  • ½ tbsp vanilla extract
  • 75g ground almonds / almond flour
  • 25g coconut flour
  • 25g mixed chopped nuts

Instructions

  1. Preheat the oven to 180c.
  2. Put the chopped apples, mixed berries, clementine juice and vanilla extract together in an oven-proof dish. Sprinkle over the coconut sugar and bake in the oven for 10 minutes.
  3. Meanwhile, in a large bowl mix the coconut oil, sugar and vanilla extract together with a hand mixer for 3-4 minutes. Add the ground almonds and coconut flour and continue to mix until all the ingredients have combined. Add the chopped nuts.
  4. Remove the fruit from the oven and sprinkle the crumble mixture on top. Return to the oven and bake for 15 minutes.
  5. Serve immediately with creme fraiche (dairy option) or whipped coconut cream (vegan option).

Notes

The crumble mixture can be made in advance and stored in the freezer in an airtight container or sealed sandwich bag.
